Unlike what you think amaranth is not part of the family of cereals, but of that of amarantacce which includes more than 500 species. Amaranth is a native of Central America, a staple of Aztec and Inca tribes. Besides the leaves are consumed, precious beans as seeds. From a nutritional point of view amaranth highlights a high content of protein, with twice the lysine (essential amino acid deficient in cereals). It also contains plenty of fiber and minerals: calcium, iron, phosphorus, and magnesium.

USAGE

Since it tends to form a gelatinous film after cooking, we recommend that you combine it with other cereals or legumes. Also, having a very small kernel size and texture "crisp", can be used as such in baked goods (bread, cookies, tarts ...). Amaranth, cooked in a pan, bursts like corn to popcorn. If you instead used in soups follow possibly these indications.
